Can you please suggest any quick & easy recipes for a novice vegetarian please?

I like Quinoa. It's so good for you and is an ideal replacement for the nutrition available in meat as it's full of protein. It's a grain so you simply boil it and add some stir fried mix veg to it. Let me know if you make some and I'll pop round for dinner!!!Can you please suggest any quick %26amp; easy recipes for a novice vegetarian please?
Stir fry is always easy and quick or you can do a veggie bake either in the micro wave or oven(which always tastes better to me but will take longer)





Veggie Bake


Given that you still eat eggs and or cheese:


Whatever vegetables you have chopped to a size so that it all is cooked at the same time (I like to blanch it in boiling water to par cook) or easier option use frozen mix.


When ready place in a dish that is oven proof and/or microwave safe


Beat 1-2 eggs depending on volume at salt pepper and herbs that you like ( I like to use parsley basil a hint of time lovage or celery leaves)and bake or nuke.


When set ...Optional add some cheese on top and melt.


Nice hot or cold so if you do a large batch you can the serve a bit hot for one meal and cold with salad or in a sandwich for another

I do a lovely sausage casserole using veggie sausages -


slice an onion, crush a clove of garlic, fry them. Add sausages, and once they're browned, add a tin of tomatoes, a tin of baked beans, some worcester sauce, and some mustard powder, and crumble in a vegetable stock cube. Simmer it for a bit until the sauce has thickened and serve it either on it's own or with mash potato. Yum. Nobody I've given it too has ever thought it was as easy as it is :)
SOUP COLD WATER,DICED ONION, 2 GARLIC CLOVES, DICED GINGER,MISO, BRING TO A BOIL,FOR ABOUT 10 MINUTES ADD A HALF A CAN OF WHITE BEAN AND A HANDFUL OF NOODLES COOK ANOTHER 8 MINUTES DONE,ADD CHOPPED CILANTRO.SIMPLE SALAD,OF LETTUCE, SLICED CUCUMBER, CHERRY TOMATO'S, A COUPLE OF WALNUTS,OR PECAN SLICED PEARS OR DRIED CRANBERRIES.SANDWICH OF TOASTED 7 GRAIN ,TAHANNI SPREAD A LITTLE ON BREAD,CHEDDAR CHEESE ,BEANSPROUTS SLICED RED ONIONS, AND TOMATO'S.DESSERT, FRESH BERRIES AND A SLICE OF BRIE CHEESE OR BLUE CHEESE, NAMASTE
Yeah I was gonna say pb and j sandwiches too :)





Really, you could eat so much!

Veggie burgers (they have the pre made ones so you add a burger bun and toppings and voila) :)





Theres way too many things I can imagine :)
Soups are a great way to start learning to cook. Red lentil soup takes about 20 minutes and is delicious.
