I need some quick easy recipes i can make for one person?

My friends going to university in the fall and I am making a cook book for him of quick, easy, healthy things he could make for his lunch or supper. Not desserts just meals. thanks :)





If any one has a easy to follow recipie for Sweet and Sour Chicken please add it!I need some quick easy recipes i can make for one person?
MEXICAN STYLE PASTA





(serves 2)


1 tablespoon olive oil


3 ounces sliced bacon, diced into 1/4-inch pieces


1 tablespoons salt


1/2 pound spaghetti


1 large egg plus 1 egg yolk, well beaten


2/4 cup grated cheddar cheese


2/4 cup of boiling pasta water


half of avocado


some corn (from a can)





1. In a skillet, heat the oil over medium heat. Add the bacon and cook, stirring often, until it's crisp. Set the pan aside. 2. Bring 6 quarts of water to a boil. Add the salt and the spaghetti and cook according to preference or package instructions. Drain, reserving the 2/4 cup of pasta water, and return the pasta while it's very hot to the pan, set over very low heat. Immediately add the eggs, half the cheese, the reserved bacon, and toss well.





6. Place avocado in a blender and with some of the pasta water to make it become creamy and then add to the pasta. Add corn as preferred.





Note: Add just enough of the pasta water (into the pasta) to make the mixture creamy, no more otherwise it won't be as good.





A basic good recipe for sauce which can be used anywhere, be it pasta or chicken is as follows:





Heavy cream, and cheese of choice, I love cheddar personally, so just take the amount of cream you like and add cheese and if you like add an egg but stir quickly and remove from heat so it doesn't harden quickly and the result becomes egg like, if you do it fast enough, it should stay creamy and taste awesome! Add some bacon and add to pasta or just place over chicken!I need some quick easy recipes i can make for one person?

Pita pizzas are quick and easy. Here's the recipe:





Split a pita pocket open and toast the 2 halves of it


Spread tomato sauce on both halves


Top with cheese and any toppings you like and heat it up (either microwave or toaster oven)





You can also use Engligh muffins instead of pita bread





Cheesy pasta and broccoli:





Cook 1 package of frozen broccoli and cheese sauce (Green Giant is pretty good)


Cook 1 serving of pasta.


Top pasta with broccoli and cheese mix





Fancy turkey sandwich:





1 tortilla


2 teaspoons whipped cream cheese


1 teaspoon pesto sauce


sliced turkey


swiss or gouda cheese


slices of tomato





Mix together cream cheese and pesto and spread over tortilla. Top with turkey, cheese and tomato. Roll up and eat!

One thing i always leave in the house for my husband to make thats easy is the banquet meals that are in the box food isle like with mac and cheese, noodles, etc....not the frozen banquet food. I know this isn't a recipe but its worth mentioning...they are quick and easy
Sandwiches, grilled cheese, salads, canned soups. Hard to cook for one person without convinience foods.
