Have you considered buying a crock pot? This is a cooking device that cooks all day long while you're away. Many recipes are available for crock pots, there are even books dedicated specifically for crock pots. If you decide to purchase one, it is likely that several recipes will be included in the instruction manual for the device. The food is tasty, the house smells great when you get home, and there isn't much mess to clean up afterwards. Just make sure you get a crock pot where the ceramic pot can be removed from the cooking base, this will make cleaning easier.
Noodle cassaroles are pretty quick, as well as enchiladas. In my town we have something called Dinner's Done where you go for one hour and make 6 meals for 6 people (or 12 for 3). Then you take it all home and freeze it. When you need a quick meal, pull it out and prepare it. I remember my mom loved it right after she had my little brother. You should see if there is something similar near you.

This is one of our favs at home and it is easy!!

1 lb. ground beef

1 can of cream of mush soup

1 can of beefy onion soup

1 can of peas

1 bag of egg noodles

Brown the beef, add the soup, peas and noodles (you can cook the noodles seperate if you prefer). It is better if you add the peas last, but it is up to you. Then let it simmer until the noodles are done. you can even add mushrooms and onions..that makes it even better.
