Really great Jalepeno Poppers:
Slice some jalepenos in half length-wise, and scoop out the seeds (takes out the majority of the heat). Fill the halves with cream cheese. Wrap each of them with half strip of bacon covering the cream cheese. Place under the broiler, flip carefully to crisp the other side of the bacon.
Place on serving dish and enjoy.
Doesn't cost too much, takes very little prep time and just a few minutes to cook. Can be done ahead and re-heated.

Nachos - get a plate of tortilla chips, cover them with cheese, meat, beans, salsa, olives, whatever toppings you like %26amp; bake them until melty, toasty warm. Serve sour cream %26amp; guacamole on the side.
Chips %26amp; salsa are good, quick %26amp; easy. You can make dip from taco mix %26amp; cream cheese or mayo. Use fritos dip-style chips for this type of dip - they don't break as easily as tortilla chips.
Margaritas - get some mix at the liquor store. Don't forget lime %26amp; salt! Also have extra tequila, salt %26amp; lemon for shots.
You could buy a few of those miniature maraca shakers or Mexican sombraros - I'll bet any party store has small decorations like that - and put them out on the table. Get a Santa Fe style table cloth, plates %26amp; napkins, maybe a pinata as a table centerpiece, and set up your snacks %26amp; drink mix there. Get a CD mix of Mexican songs to play in the background.

Decorations can be as simple and affordable or elaborate and expensive as you like. First decide which direction you want to go. My guess is simple and affordable. Streamers and balloons are ok, but look only ok. Try a Mexican blanket as a table cloth for your coffee table and your kitchen table. The colors to use are the ones found in the Mexican flag (red, green %26amp; white). You can always buy inexpensive items at a party store: chip bowl that looks like a sombero, party hats, etc. Buy colored napkins instead of Cino de Mayo napkins (you can use them another time). Buy stickers to personalize plain drink cups instead of buying Cinco de Mayo cups. Use a color printer to print out Mexican themed clip art. Print multiple pictures and tape together to make three dimensional decorations. Purchase inexpensive flowers (red carnations) and arrange in a glass vase using colored rocks or even pinto beans to stabalize the stems. Rocks for fish tanks come in many colors, including red, green and white. You could even theme the decorations after a sea side Mexican celebration instead of the expected red, green and white colors.
Food: Assemble a taco or tostada bar. Let guests create their own plates from an assortment of fresh ingredients; with or without meat. Offer shredded lettuce, chopped tomatos, onions, cilantro, shredded cheese, and sliced avacado. If you prefer to offer appetizers only your choices include mini tostadas, chips and salsa, or mini frozen Mexican goodies from your grocery store's frozen food section. The key is to offer variety, and to roll things out in small portions, instead of putting everything out all at once.
The mini tostadas can be made from round Tostitos with a bit of salsa, or guacamole, or bean dip on each chip - sprinkle some shredded cheese and pop in the oven to melt.
Nachos are great too - build your nachos in layers: chips, salsa, cheese, more chips, salsa, and cheese - pop in the microwave just until the cheese is melted
If you put out chips and salsa, put out at least 2 kinds of chips, and at least 3 kinds of salsa - Spicy salsa, sweet salsa, garlic salsa. Serve the salsa in red or green peppers instead of just plopping it in a bowl.
Beverages: Cerveza - cold!! Sangria - store bought with sliced fruit floating in it (oranges) if you have a bit more money to spend serve margaritas, but remember you'll be in the kitchen mixing them up in the blender - and you'll be out of tequila before you know it. Remember to also serve non-alcoholic beverages too, some poor soul is the designated driver.
And remember to have a game or two planned. It sounds stupid, but its a great way to get a party moving, get people talking who don't know eachother. If they've never met, they'll have something in common after playing a game either by competing against eachother, or playing on the same team.

food can be just about anything. Carnitas, Carne asada, arroz, and of course can't forget the frijoles. Drinks Coronas, Modelo, and maybe Tecate.
Don't forget the salsa.

A really easy Seven Layer Dip
On a large serving platter or a 9x13 cake pan layer
1-2 cans refried beans
1 16oz. container sour cream mixed with 1 pkg. taco seasoning mix of your choice (Mellissa's Chipolte dip mix is great)
1 cup (or more)grated Mexican blend cheese or grate up some jalapeno pepper monterary jack
1/2 cup or so of chopped onion (green onion is good too)
1 1/2 - 2 cups chopped or shredded lettuce
1/2 - 1 cup chopped tomatoes ( I like cherry tomatoes best)
Drizzle with your favorite salsa
Serve with corn tortilla chips
Another easy dip
Brown about 1 pound of lean hamburger and drain.
In a crockpot mix together 1 large brick Velveta Cheese, browned hamburger, and 1 can your choice Rotel tomatoes. Melt. Depends on what setting you use how long it takes to melt, just be sure to stir often to keep from burning and keep it on lowest setting after melted.
