for a start. But what else?I have 20 eggs in my fringe. Any quick recipes to get rid of them. I intend to make a 6 egg omelete?
You can bake a cake that uses lots of eggs, eg. rich butter cake or if you've some patience %26amp; time you can make kaya (Asian rich coconut egg jam).
Butter Cake:
310g (11 oz) each of flour and sugar
10 egg whites
10 egg yolks, lightly beaten
2 tsp baking powder
455g (16 oz) butter
6 tbl condensed milk
2 drops almond essence
2 tsp vanilla essence
2 tsp brandy
- Sift flour twice.
- beat egg whites, sugar %26amp; baking powder till thick. Add egg yolks, a little at a time, and continue beating till thick %26amp; creamy.
- In a separate mixing bowl, put the butter %26amp; condensed milk. Beat till well blended, about 5 mins. Add both essences %26amp; brandy, beat till blended. Add 1 cup of egg mixture %26amp; mix thoroughly. Continue to fold in the flour lightly and rest of the egg mixture.
- Pour batter into the cake tin and bake in a moderate oven at 175C or 350F for 10 mins. Lower heat to 135C or 275F and bake for another 45-50 mins or until done.
Kaya (Rich coconut egg custard jam):
400ml thick coconut milk
10 eggs
560g (20 oz) coarse sugar
2 screwpine or pandan leaves, tied in a knot
- Beat eggs %26amp; sugar till well mixed
- Heat egg mixture %26amp; pandan leaves over a very low heat to dissolve the sugar (about 10 mins). Keep stirring constantly. Remove from heat and discard the pandan leaves.
- Add the coconut milk to the mixture and strain into another small pot. Stand this pot on a rack in a larger saucepan of boiling water (or use a bain-marie/double boiler) and heat the egg mixture until thickened like thick custard cream, you must keep stirring all the time to prevent lumps (about 45 mins).
- Kaya is delicious on toasted bread, sandwiched between 2 layers of sponge cake, used like jam on English muffins etc. If you find it too sweet, use less sugar the next time you cook it.I have 20 eggs in my fringe. Any quick recipes to get rid of them. I intend to make a 6 egg omelete?

You can also make French toast with them. You can freeze the French Toast for a later use. Precook it and put in a plastic bag before placing it in the freezer. When it comes time to use it, just pour some syrup on it and place it in the microwave at med for about 90 seconds. I do it all the time and it is great for a quick breakfast or brunch.
How about an egg salad for sandwiches or you could make your egg salad and add a few boiled potatos for a small potato salad.
