Quick recipes that require Anchovies?

HI! I've got this weird craving for Anchovies that I cannot settle! I'm too lazy to cook Puttanesca and anchovies alone will get boring fast.

4 Tablespoons extra virgin olive oil


4 jalapenos, seeded and -- finely chopped


2 Tablespoons sliced almonds


1/2 Medium red onion -- finely chopped


1 Cup dry white wine


1 Cup basic tomato sauce


1 Pound anchovies or sardines -- cleaned and gutted


2 scallions -- thinly sliced


10 basil leaves -- chiffonade


10 mint leaves -- chiffonade





In a 12 to 14-inch saute pan, heat oil until smoking. Add jalapenos,


almonds and onions and cook until softened and lightly browned, about 2 to


3 minutes. Add white wine and tomato sauce and bring to a boil. Add


anchovies and return to boil. Lower heat to simmer and cook through, about


8 to 10 minutes. Pour into warm bowl, sprinkle with scallions, basil and


mint and serve with grilled bread drizzled with good oil.


Yield: 4 servings

3 Anchovies -- salted whole or


1/4 cup Parsley -- finely chopped pre


2 Cherrystone clams -- in the s


1/2 teaspoon Rosemary -- chopped


1/4 cup Olive oil


1/2 cup Dry white wine


3 tablespoon Butter


Freshly ground pepper to tas


3 cup Garlic -- minced


1 pound Linguine ; other pasta -- coo


2 Shallots -- finely chopped





If salted whole anchovies are used, wash them in cold running water to remove most of the external salt and any tiny scales that may be present. Use the fingers to pull the fillets from the bone. Discard the bones. Set the fillets aside. Open the clams or have them opened and reserve both the clams and 1 cup of clam juice. Finely chop the clams and set aside. Heat the oil and butter in a skillet. Add the garlic and shallots and cook until light brown.Add the anchovies and stir until they dissolve. Add the parsley,rosemary, reserved clam juice and white wine and bring to a boil. Add pepper and a tiny bit of salt and simmer 15 minutes. Add the chopped clams and cook 5 minutes. Serve piping hot over the freshly cooked pasta. Serve red pepper

Fried Calamari With Spicy Anchovy Mayonnaise

3/4 cup jarred mayonnaise


4 anchovy fillets -- (up to 5)


2 tablespoons lemon juice


1 tablespoon finely chopped parsley


1/2 teaspoon cayenne


1 pound fresh -- clean squid


4 cups light olive oil or vegetable oil


1 cup all purpose flour


1 cup graham cracker crumbs


1 teaspoon kosher salt





In a food processor, combine the mayonnaise, anchovies, lemon juice, parsley and cayenne. Blend until smooth. Transfer the sauce to a bowl and refrigerate, covered tightly, for up to 2 days, until ready to serve.





Cut the squid into 1/3-inch rings. If the tentacles are large, halve or quarter


them lengthwise. Refrigerate until ready to use.





In a heavy bottomed straight sided 3 quart saucepan, about 8 inches in diameter


, heat the oil to 360 degrees.





In a shallow bowl, combine the flour and graham cracker crumbs. Toss 1/3 of the


squid in the flour mixture to coat evenly. Shake the squid in a mesh strainer


to shed extra coating. Using tongs or a slotted spoon, gently lower each batch


of calamari into


the hot oil and fry until golden brown, about 2 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt. The cooked squid can be kept warm in a low oven while you continue. Check your oil temperature and repeat


with remaining calamari. Serve hot with chilled anchovy mayonnaise.





Yield: 2 servings
Fresh continental bread and some fresh lemon juice. I sometimes add some margarine , lettuce and tomato is good to, yes. As an italian, I grew up with this.
